If your building only allows gas, we cook on gas. It is a common situation in Barcelona and it is not a problem.
We arrive 90 minutes before your guests to light the fire, because embers cannot be rushed. The meat comes off the grill in waves, chorizo and morcilla first and then the cuts, so nobody waits with an empty plate.
Four hours end to end. We leave when the sobremesa does.
